Novel #3 (Trailer)
What a week!
Shop #3 is now open.
We started building the trailer back in January…
It took about 3 months to finish the shell and another 3 months to get operational.
I was away all of June which slowed our progress but still… a good 6 month’s of work.
My goal was to serve 150 customers on opening night and we came just short around 125.
Our team was dialed in and nothing broke so I’m thankful it went the way it did.

Re-print a larger menu so it’s easier to see when standing in line
Make final improvements to the exterior of the trailer to meet City of Peoria standards
Plan event schedule for the fall
Novel #4 (Truck)
Confirmed - wrap should be complete by end of week while they perform final inspections.
When it’s ready we’ll either head out to Texas to pick it up or have it delivered to Arizona.
Just depends on the cost.
The spot I’m looking to place the truck 3 days a week is gonna be challenging to lock up with the city regulations I recently discovered.
I’m going back to the drawing table to see how we make this work in Avondale.
If not, we’ll have to find another space.
Good news… we’ll be very busy starting in November with events.
We’re already booking stuff for March and April of next year.

Finalize city and state permits
Finalize order sheet before truck arrives
Draft location schedule
We’ll do different locations around the valley depending on regulations
/permitting
Promote (preference) or hire new manager for this location
Draft pre and post event checklists and pre-event emails to customers

Really because I don’t stick to my training.
I tend to let it slip when I’m on the road.
